In a large bowl, mix 1 tablespoon oil, 1/2 tsp. salt, and two teaspoons of seasoning (above). Toss in the potatoes and mix throughly.

Take a large cookie sheet and place a large wire rack on top. Spray with Pam. Arrange potatoes in a single layer on the wire rack.

**SOPAPILLA CHEESECAKE**

This is one of my favorite dessert recipes. It's so simple and doesn't take long at all. I've seen it in magazines all over. This is the easiest version I've seen though. Enjoy!

You will need:
13 x 9 inch pan
(2) 8 oz cans crescent rolls
(2) 8 oz blocks cream cheese
2 cups sugar
1 stick butter
1 tsp vanilla
1/2 tbsp cinnamon
1 egg white

Preheat oven to 350. Lightly grease bottom and sides of pan.

In first bowl, mix together cream cheese, vanilla and 1 1/2 cups sugar until smooth.

In second bowl, mix 1/2 cup sugar and cinnamon.

In third bowl, melt 1 stick of butter.

Roll out one can of crescent rolls in pan and smooth out. Pour cream cheese mix in pan and spread. Roll out another can of crescent rolls on top. Brush with egg white. Pour butter and cover evenly. Sprinkle with sugar/cinnamon mix.

Bake for 30-35 minutes or until top is darkened.

Enjoy!!!!
